About that name

Deep in the forests of our hilly home, legend speaks of a father and son on a wild boar chase. The boar retaliated and charged at the old man.

In panic, his son cried out “Taga, itay!” or “Cut him down, father!” with those words echoing throughout the ridge and heard by all.

Papa Bolo directly translates to “Father Knife”, a nod to the origins of Tagaytay City’s own name according to folklore.

We believe that beer can bring people together.

Key ingredients found in our menu are locally sourced to support our farmers while the space is made to be enjoyed by beer epicures and casual drinkers alike. Community building and local empowerment are front and center of our brand.

Piña Niña is both a crowd favorite and a brew close to our hearts.

Papa Bolo was born out of the desire to create a beer that was uniquely Tagaytay, using Pineapples harvested by the local farming community.
Our Menu

Papa Bolo is a space that encourages both beer geeks and casual drinkers to embrace the craft of brewing.
